Yummy Spring Meal

This is from A Year in a Vegetarian Kitchen by Jack Bishop. It is quite yummy. This recipe description is not in very good order, best to read the whole thing first. And add salt and pepper to taste.

For two people:

Toast 4 slices of country white bread.

Cut asparagus into one inch lengths. Cook in boiling water for two minutes.

Mix 3/4 cup crumbled feta with 1 T diced mint and a little milk to make a spread.

Whisk 4 eggs with a little milk, add the asparagus, and gently scramble until eggs are set.

Spread feta mix over toast and top with eggs and asparagus.

We got our first CSA box today and it was full of fresh organic vegetables, including asparagus. We made this meal and it was delicious! It is one of those breakfast-for-dinner type meals, and would actually be very good for breakfast, brunch, or lunch.

MACRO

I am AMAZED by the macro capabilities of my simple camera. My husband gave me a tripod for my birthday a few years back, and that makes all the difference in the world. I would like some day to get a fancy digital camera with a dedicated macro lens, but I think for now, this does just fine. You can take close up photos of tulips,



capture the bleeding heart flower in the act of unfolding,



and actually see the pollen on the geranium flower.

Purple

Purple is one of the dominant colors in the garden right now. We have the purple of phlox,


the blue purple of virginia bluebells,


the grape purple of irises,


the reddish purple of violas,


the indigo purple of catmint,


and the orchid purple of tulips.


My new toy

This may not look like a toy, but it is.....

A big spherical ceramic cobalt blue globe. I have been wanting one of these for years. At the place I got it, they also have a beautiful orange and a nice lime green. I think I need a little series of globes, to arrange and rearrange in the garden.
